Vigorón is found everywhere across Nicaragua, especially in the city of Granada.
Most restaurants carry some version of the dish, but to truly appreciate the joys of Vigoron it’s best enjoyed as street food – right off the big green leaf it’s served on.
In 1914, Maria Luisa Cisnero Lacayo had been selling her street food dish of yuca and pork rinds at local baseball games with some success, but wanted a catchy name to boost sales.
She was looking for a name to make her trademark dish stand out from those being hawked by other local vendors. One day, her eyes fell on the dramatic image of a man
wrestling with a huge bull in an advert painted on a wall for a cure-all tonic called Vigorón. The slogan for the tonic was “Vigorón Vigoriza!” (Vigorón Invigorates!).
When Maria applied it to her trademark street snack it caught on.
Soon all the street vendors wanted to sell vigorón, and a new dish was born..
This is a traditional Nicaraguan dish and it is a great appetizer or side dish that anyone can do at home.
